Doca Posted March 19, 2012 Share Posted March 19, 2012 Cela zabuna je jer stalno promice razlika u jednom slovu... Egg Albumen i Egg Albumin. U Anglosaksonskoj literaturi se kompletno anhidrovano belance zove "Egg Albumen" i on u sebi kao jedan od sastojaka sadrzi i Egg Albumin tj. tacnije Ovalbumin koji je jedna od vise od 100 belancevina iz grupe Albumina. U belancetu jajeta osim Ovalbumina koji cini oko 8% ima jos i vode oko 90% kao i Mukoproteina i Globulina (zajedno oko 2%) te vrlo mala kolicina ugljenih hidrata. Inace albumini se nalaze i u krvi i raznim biljkama a ne samo u jajetu. U praksi je za nase potrebe ta razlika verovatno nebitna, ali striktno govoreci, te dve stvari nisu apsolutno iste.
